My father is a chef, so I learned how to cook at a very young age with traditional methods of using meat as the main course. Since becoming vegan, I wanted to create food that had you not missing the flavours and textures of meat. I focused primarily on whole organic foods. I do not try to replicate meat that often. I work with flavours I am familiar with and of course flavours from the region, now residing in Mexico 5 plus years. My techniques are simple, balanced, full of protein and nutrients. I have been cooking for over 20 years, 7 of those professionally. I became vegan in 2013 and now have my own restaurant in Playa del Carmen. The restaurant serves amazing fast casual vegan comfort food and more. I want to grow my vegan culinary skills by preparing more fanciful protein rich meals that will not only challenge me, but make my clients that much more happier.
