Rustic, with European technique. I can flex to traditional Japanese,Thai, and Vietnamese as well. Medditerannean might be my greatest love, however I am currently enjoying the bounty America has to offer as well as cooking seasonally.
Having cooked since I was 15, I entered culinary school at the age of 23 to refine myself. I apprenticed with Jenn Jasinski at Rioja while studying culinary techniques with the ACF. Upon finishing my apprenticeship studies, I was a sous chef for North Italian in Cherry Creek, I then was a sous chef at Bloom New American in Broomfield. I became the sous chef at Steubens Food Service for six years before taking a countryside sabbatical where I became the Executive Chef of the Chute Rooster in Hill City SD. Upon returning to Denver, I started True West Tacos food Cart as an owner/partner and became the Exec Chef at Devils Food on South Gaylord in Denver. Now I choose to focus on my Food Cart and catering service while honing my craft.
