My name is Nicolas Desinai from Bretagne, France. I have been in Canada for 20 years with over 30 years of total private catering & restaurant experience as an executive chef in Michelin stars and Relais & Chateaux. I have 8 years of experience as an executive chef in a private golf club. Organized the whole dining room, wine pairing as well as the menu for private events in the South of France. Since I have been in Calgary, I have been an owner of a French restaurant, Executive chef in Priddis Green golf course & Bow Valley Ranch.
I highly recommend Chef Nicolas because I've had 3 of his dishes for the past year. My most favorite is the breaded fish. The batter was smooth and it didn't give me heartburn after all. The fish was thoroughly cooked and the breading was so crispy. I'm usually very picky with the fish dishes though, I'm on a pescatarian diet. Recently, I had the baked arctic shark and it just melted in my mouth. Chef Nicolas captured my taste buds and you should also try his dishes out.
Highly recommended. Nicolas provided an impressive catering service for my party with the taste of food, creativity, cleanliness, and professionalism. The beef bourguignon, a very classical French cuisine has a truly amazing taste! My co-workers hired him again for such a wonderful food experience.
