The menu consists of 4 dishes, all my favourites. Ceviche, bisque, fish in a salt crust and pavlova are the perfect combination for a romantic dinner.
A sea bass is cut in thin, almost transluscent parts and is ''baptized'' in lime juice. The smokey eggplant gives an extra earthy flavor and the passion fruit balances the acidity of the plate.
It takes a lot of technique to make a bisque and this is the main idea to a perfect result. The paprika crostini and the infused butter along with the lobster meat give an extra kick.
The Chef ''breaks'' the salt crust on the table and makes the experience unique. The steamed veggies are the perfect match to such a delicate dish.
The perfect way to end up a meal...The crispy meringue is hugged by the softness of the cream and the strawberry gives its color and acidity to the whole bite!
