Amuse Bouche 
Foiegras macaron, foiegras mousse, vietnamese flavour greens. Get the full umami cold and crispy macaron. One savoury macaron make you surprise !
Prawn tartar marinate with salt, pepper, lime zest and fish sauce. Cover them with pickled squash and put on the soft salted egg yolks on the plate. Sprinkle with some of dry star anis powder.
Appetizer

Main Course 
Pork sous vide and blowtorch with chinese sweet and salty glaze. Serve together asparagus, pickle radish and Hoi An crash cake, peanut ferment chili sauce.
