I prefer to eat local produce and meat when ever possible. I am well practiced in the use of many local crops, and have come to have a personal tie with the food I cook. I use many french techniques, but cook in a variety of styles. My personal favorite being pit cooking and authentic BBQ.
I am a chef in the Hudson Valley. I have cooked in local restaurants for about ten years now. I am 30 years of age and versed in many styles of the trade. My experience ranges from fine dining, to catering, as well as pit cooking. In the years I have been in the industry I have been responsible for many services. Down to the smallest detail.
