As a culinarian, I was trained in Classical French Cuisine although my passion for Authentic Italian and the use of fresh, locally grown ingredients & fresh pasta drives me to focus more on Refined English/American Cuisine with an emphasis on Seafood.
I have worked in the restaurant industry for 11 years. I have been a Chef for high-volume chain restaurants, family owned gastropubs, and most recently I was a Sous Chef for 5 years at the luxurious Ritz Carlton Hotel.
