A mixture of American, French, with a bit of southern and Italian thrown in. Simple, fresh, nothing canned or bottled. Why buy it when you can make it yourself? Fresh herbs are a staple, and are in nearly everything I make. Allergies and client likes/dislikes are considered of course. Food is life, and should be enjoyed to the fullest.
I have been cooking and baking at home since I was a kid, and professionally for three and a half years. I didn't go to culinary school, as I had different aspirations going into college, and personal reasons that drew me out. However, I believe that cooking is a science, an art, a craft, and a state of mind requiring passion, a love of food, and a willingness to learn every single day. On the professional level, I could confidently and effectively put together a dinner party or a quick meal for a family on the go. They don't call me Becha-MEL for nothing , as I make a delicious mac and cheese, which incidentally can be dressed up or down. I currently work for a privately owned catering company/cafe in Hunderton County, NJ. I also have experience working with different dietary needs and organic ingredients including vegan, vegetarian, and gluten-free. This is a scratch made kitchen, american/French style cooking from soup, salad and sandwiches to 7 course meals, weddings, baby showers, a weekly Sunday brunch, etc.
