My personal favorite is cooking with beer. A good beer paired to a good dish is probably the best thing in the world after a long days work, or on vacation or, well, any time. But as far as a style goes, it depends on what I'm doing. When I'm making appetizers, I like to make them a little on the lighter side but still satisfying. Main courses can be tuned to taste, but I'm not cooking for me, I'm cooking for you. Your taste is my taste! Deserts usually follow the same as appetizers. Light, but satisfying.
I got my start in Dukes BBQ pit, a from scratch kitchen with smoked meats and so forth. I make a damn good bbq sauce, and I can smoke anything. Since then I've worked in several diners, a country club and a fine(r) dining restaurant. I can cook for 10 or 20 as well as I can cook for 1 or 2. I've always been the go-to guy in the kitchen, and I want to be the go-to guy for you as well.
