My cooking style differs depending on where I work. My food is about taste and i use flavours in my dishes to enhance but not over power the main ingredients. Food is my passion and I enjoy peoples reactions to what I produce. All my meals have gluten free a option.

I have been a qualified Chef for 30 years working in five star restaurants and leading hotels of the world. I have worked around the world including Dublin, London, Sydney and France. I have also worked in small family run cafes and had my own business for 12 years before taking a Head Chef position.
