Classical french techniques, fresh and local British ingredients. I like to work with vegetables and incorporate an 80/20 ethos, using 80% plant based products and 20% animal products. All dishes are produced to a two rosette standard for a refined dining experience.

I have been working as a chef for twelve years and currently work as a head chef in Birmingham City centre. I have worked at a range of levels and cuisines, including five-star hotels, rosette kitchens, boutique hotels, Italian, French, vegetarian and vegan food.
