Modern Terroir, I use many international styles, but I love local product that I can get even from small farms or forage/catch/hunt myself. I also am avid on fermentations and other techniques of unlocking unique flavour.

I am a Chef of 11yrs with expeeience in CAA/AAA 4 Diamond Hotels, 5/4 Diamond Restaurants, and several Relay & Chateau properties. I am Currently the Executive Chef/Owner of Mirage Eastern Cuisine in Warfield, BC.
