I'm a big believer in trying everything once. I'm also a student of the profession. If I haven't cooked it yet, I want to. I love trying new dishes. I love to create and experiment. I'm also a fan of simplicity. Good food doesn't have to be complicated to be amazing. That's why I love Italian food. It's simple but comforting.
I've been working in the culinary industry since I was 12, in a tiny takeout joint in my hometown. I've worked in every avenue from Mom and Pop restaurants, to hotels, chain restaurants, privately owned restaurants, and airport restaurants. I've even done, and continue to do, catering orders, when the time allows. 23 years later, the kitchen continues to be my safe haven, and biggest creative space. I'm also very aware of food allergies and take every precaution to avoid cross contamination. Cleanliness is the rule of the land in my kitchens.
