French, classic influence. Ingredient driven menus, many years of food and wine pairing knowledge and experience with many high profile BC wineries. As I have a 2 acre orchard property in wine country, I am focused on seasonal and local sourcing with sustainability in mind, using organic ingredients wherever possible. All meats and poultry used are free range, additive free and local. Seafood is sourced from Oceanwise Certified Sustainable sources.
As an experienced and passionate chef, my goal is to strive for excellence, providing the highest quality food and service to all of my clients. I understand the opportunity I possess to exceed expectations, and make priority of responsible, ethical and local sourcing. As a farmer, I feel it is my responsibility to provide my clients with healthy, nutritious food, well balanced and with variety in mind-making every effort to represent the pinnacle of quality ingredients available locally, and from sustainable, organic when possible farms. With 21 years in the high end culinary scene, I believe I can elevate every experience with my creativity, passion and demeanor.
